Pistachio-Apricot


My cousin, Amber, gave me the recipe for this amazing granola. 
It's too good to be true. 
Seriously. 
It's so easy to make, and it is straight from heaven to the taste buds!

Go make some.

Pistachio-Apricot Granola

3 c rolled oats (not quick-cooking)
1 c shelled pistachios
1/4 c butter
1/3 c honey
1 t cardamom
1/2 t coarse salt
1 c dried apricots

preheat oven to 300. in a large bowl combine oats and pistachios. in a small sauepan, combine butter, honey, cardamom, and salt over medium heat. cook, stirring occasionally, until butter melts. pour butter mixture over oats and pistachios until they are completely covered. transfer to a parchment-lined baking sheet and spread in an even layer. bake until oats are lightly golden, 30-35 minutes, stirring every 10 minutes. let cool completely on a wire rack, 20 minutes, then stir in apricots. store in an airtight container up to 3 weeks.

Grand-ola!


Pullin' out the oats....our bucket has been empty for quite a while now... and I've been trying to get the pantry full. Why is keeping up on the pantry such a task for me? I always forget something when I go to the grocery store, even if I make a list! That's definitely something I'll be working on for a while yet.... back to the empty bucket. What bucket, you say? Our Granola bucket!


... and in go the almonds, flax seeds, and sunflower seeds for this batch.


For yummy saucy stuff I used Molasses, oil, vanilla, applesauce, cinnamon, and salt.


Into the oven it goes, stirring every fifteen, waiting for that golden deliciousness to appear. When that pan is  cooled, I add my fruits.


I usually don't like this mixture of fruit, but for some reason those crunchy dried bananas were calling to me. I chopped up all these guys really small, and also added some coconut, dates, and a few dried cranberries. I usually go for just dried cranberries and apricots, so I decided I needed to change it up for at least one batch!


I love granola, and now I can't wait for breakfast... or snack time... or for when I don't feel like cooking dinner!


...and now the bucket is full!!  ....for a minute anyways.
